http://www.sirena.dk/Redfish (Ocean perch) has an orange to reddish skin and a short
Redfish/Ocean perch - 25-90 cm.
, chubby shape. Rich in flavour, it has excellent eating qualities. In its frozen form it is widely accepted in export markets world-wide.
There are basically two main types of redfish available:
Sebastes marinus: mainly caught in coastal areas ? pink and orange in colour.
Sebastes mantella: caught mainly at 800 - 1200 metres and with a deeper red colour.
Both types are highly appreciated for catering as well as for further processing into fillets, both skin-on and skinless. They are caught in the waters around Greenland, Iceland, the Faroe Islands and Newfoundland. Redfish is available as frozen whole fish, headless and gutted or as fillets, skin-on or skinless. Packed IQF, layer or in blocks.
The season is mainly from April to September depending, however, on where in the North Atlantic they are harvested. In Greenland, winter fishing also occurs.
Fillets: Shatterpacked, IQF, blockfrozen 40-110 gr. 60-120 gr, 120-140 gr., 140-160 gr.
Packing: 3x6 kg/3x6,5 kg, 5 kg, 10 kg, 10 lbs, 40 lbs
